Pumpkin Cinnamon Chip Cookies

3/4 cups butter (no substitute)
1 cup brown sugar
1/2 cup white sugar
1/2 can (15 oz.) solid-pack pumpkin
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup cinnamon chips

1. In a large mixing bowl, cream butter and sugars.
2. Beat in pumpkin, egg and vanilla.
3. Combine the flour, oats, baking soda, cinnamon and salt.
4. Gradually add dry ingredients to creamed mixture.
5. Stir in chips.
6. Drop by tablespoonfuls 2 inches apart onto an ungreased baking sheet.
7. Bake at 350º for 10-12 minutes or until ligtly browned. Remove to a cooling rack.

Yield: 3 1/2 to 4 dozen cookies
