Salted Peanut Cookies


1/2 cup shortening

1/2 cup butter

1 1/2 cups packed brown sugar

2 eggs

2 teaspoons vanilla

3 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon salt

2 cups salted skinless peanuts


1. Preheat oven to 375º F.

2. In a large mixing bowl, cream shortening and sugar. Add eggs and vanilla; combine thoroughly.

3. Sift together the dry ingredients. Add dry ingredients to the creamed mixture  (I put all the dry ingredients in a strainer and sift directly into the wet ingredients). Mix just until combined.

4. Stir in peanuts.

5. Drop rounded teaspoons of dough about 2 inches apart on lightly greased baking sheet. Flatten with the bottom of a greased glass dipped in sugar.

6. Bake 10-12 minutes or until golden brown.

Yield: 3-3 1/2 dozen cookies
